Name: jem
Date: 12-11-2010
Shift: 630b
Event: geeks/80's dance party
Customer: easy-breezy. not nearly the chaotic madness we experienced on yesterdays transition from the buy-out. it was busy but really more steady than anything....very calm and controlled. no outta control guests. just festive and happy parties. lots of big parties throughout including dining. bowling fizzled early. dance floor stayed packed until 1-ish. karaoke was booked solid til close.

Server: A-squad in dining. from what i heard it was mostly smooth sailing. everyone sold lots and made good $$. morale was surprisingly better tonight too. for the first time in i don't know how long, i didn't hear any excessive whining! i'll take that any day of the week and twice on sundays! mr. paul held his own in bowling as per usual and taira was a rock star in karaoke....great sales and tips.

Support: stellar performance tonight! steven, bill, shley and ian were on point all night! i do like ian as a support much better than as a host/res. that boy hustles when it's busy! i'm glad you guys wisened up about that! brent ran the well and i thought he did a great job on pumping out tix. there were issues about incompletely ran or misrun tix. he wasn't policing the well but the well bartender really shouldn't have to. overall big kudos to support and well.

Kitchen: kitchen had their asses handed to them from 8-9. we did have some issues with long ticket times and incomplete orders. but from what i heard in dining, it didn't really affect guest there as much as it did with a party in bowling. only 1 comp was made due to that so overall they did the best with what they were dealt with.

Top Three/Bottom Three: i really thought most of the staff shined today with taira taking tops. no one really did anything negative that i could tell. really good group tonight all in all. very enjoyable shift

Tuesday, December 7, 2010

Name:Sarah
Date: 5/6/10
Shift 6:30 B
Event:ROT. Apparently we were in the paper, so dining and cocktail were a bit busier than usual.

Customer: I heard of no complaints. Everything with smoothly. The 12:30pp was very laid back and a few of them stayed and partied in the karaoke rooms for a while.

Server: Kristen was slammed in karaoke and everyone did a swell job in helping her out. Maria was sick so Lucas had to be moved to 3:30 bowling which was also slammed early on. He was in a good mood so of course he did a great job. Although someone needs to remind that boy of the words, " may i, please and thank you". I would, but i scare him. Anyhoozle, everyone held their section down with ease. It was a good night for teamwork with everyone being busy in their own sections but still running drinks and food instead of standing in the well or in front of the expo line.

Support: Cameron and Aaron were a bit on the slow side at the beginning of the evening. But I think someone mentioned something to them and they picked up a bit. I don't know if Alisha really understands what she needs to be doing. This is the second time in a row where she was not the liason between and dining and bowling party.

Kitchen: Smooth like butter on hot biscuits.

Top Three/Bottom Three: Everyone was on the ball. Good job!

Thursday, December 2, 2010

Name: Susie
Date: 12/1/10, Wed
Shift: Bowling Close
Event: Disco Dance

Customer: It was pretty busy for a Wednesday. I had a 4 lane party with 20 separate checks for the majority of the rush, but everything seemed to go fairly smoothly. There was also a 30 top in dining and Dionysium came in around 9.

Server: Kris seemed to be in the weeds taking half of the 30 top and waiting on Dionysium. I know the D party went to the bar to try and get drinks atleast 5 times because he wasn't around. Then he tried to rush to get cut and do his sidework to go to some event, and transferred Devin a table that he didn't want. It all worked out, but if a server doesn't want to take a transferred tabloe/lane/room, then they don't have to. Accepting anything transferred is being nice, and I think we should add this to the shift notes.

Support: Everything went really smooth last night behind the res desk. The well was kind of putting me in the weeds during my 4 lane party because no one was really helping Tim. Now that we are getting busier, maybe we could add a 2nd well that either comes in later, or comes in earlier and leaves earlier. Just throwing out ideas here.

Kitchen: The kitchen has really found their groove, I haven't had any long ticket times in awhile.

Top Three/Bottom Three: Everything went smooth- running duties were done, closing side work went well, good job HB team!

Saturday, November 27, 2010

Name:jonesy
Date:11/26/2010
Shift:sl 630 b
Event:Copa Kings

Customer: Everyone was great. An nice older crowd. Just like last day after thanksgiving, it was a lot of families. Dining was steady all throughout the dinner rush,as well as bowling and karaoke. This was probably the busiest copa kings crowd we have ever gotten.

Server: Everyone as on the money tonight. It was busy, but it was smooth like butter. Teamwork and good attitudes all around. I was glad to have such an all-star staff tonight.

Support: Steven is really doing such a great job. Cameron and Aaron were a little iffy behind the reservations desk tonight. Maybe they shouldn't be scheduled together? Or maybe they just need a stern talking to.

Kitchen: Jesse rocks. The kitchen rocks and Eric G. is a god. They are all really stepping it up. It was good staff tonight.

Top Three/Bottom Three: Seriously, no one deserves to be on the bottom three tonight. Everyone was on the ball and i didn't hear one complaint. Way to go, team!

Wednesday, November 24, 2010

Name:Jonesy
Date:11/23/10
Shift:630 B SL
Event: Boombox

Customer: There were a few mess ups with the reservations desk and some fees had to be comped. The customers were cool about it and Adrian smoothed everything over like a champ. Bowling was a bit busy, dining was steady but died quickly around eight or so. Karaoke was somewhat steady for a tuesday night. Bowling and Karaoke died around midnight.

Server: I'm really happy about the staff we have now. Everyone was on the ball and doing what they were supposed to. Steven Paul and Coltrane were on PP but were very helpful after it was over. Note: Everyone is burnt out. I don't know how to remedy this, but it is definitely happening. I think we need some kind of boost.

Support: Steven kicked ass. His attitude has improved remarkably. He mentioned that he doesn't understand why he hasn't been server trained yet. Maybe someone should talk to him about this?

Kitchen: on the ball. Jesse is a badass and I am happy to have her on our team. She is doing a better job than some of the people who have been here for months. kudos on that hire.

Top Three/Bottom Three:Kyle, Coltrane and Kris Janes/ Stephan Paul because he peaced out without doing his share of the closing duties. I love the guy, but that ain't right.

Monday, November 22, 2010

Name:Jonesy
Date:11/22/10
Shift:PP/ 630 B
Event:Spy Kids

Customer: Everyone in the PP was super cool and laid back. The kids were well behaved and everyone had a great time. One person was upset that he got cut-0ff but got into the cab that was called for him. Another person refused a cab and Heather had to chase him down and call the cops.

Server: It was pretty slow so everyone was on the ball.

Support: Steven did a great job tonight. Him and Ian are really stepping it up!

Kitchen: Pumped out all of the PP food with ease. After nine, it pretty much died in dining.

Top Three/Bottom Three: Everyone did a great job keeping busy.

Tuesday, November 9, 2010

Name:Jonesy
Date:11/8/10
Shift:SL Bowling
Event:ROT

Customer: It was a steady night. Cocktail was a bit busy with the ROT crowd. There were only a few complaints and they were mostly about food.

Server: Lucas followed me around with his checkout after I asked him politely to wait. He badgered me to the point were I just signed his checkout to get him out of my face. When I looked around to check on him, he had left a bit of silverware. We need to tell the servers to wait on silverware unless we are running out. Too many times do I see silverware and the servers telling me that they did their share an hour ago. Mikey crashed and burned in cocktail. He had one thing go wrong and just couldn't get his head on right after that. I thought he handled being frustrated pretty well. He didn't get aggressive at all, but he should've asked for help. In his defense, he never gets weeded like that.

Support: They did a fine job keeping up with everything.

Kitchen: There were a few food items that needed to be comped. Bison meatloafs came out cold. A few items were undercooked. Other than that, they were on point.

Top Three/Bottom Three: Jem kept his head on a helped out a lot with the Mikey situation./ Lucas for badgering me a checkout and Mikey for not asking for help.

Shift:630 bowling
Event: no event
Customer: very slow night. all the action was with kyle's private party. we did have a nice pop in bowling after 1130.

Server: i have been having a few conversations with sean about his performance. he has asked me for advice on how to handle his write-ups and his reputation. he had a big top in dining...what looked like a birthday or bachelorette party. i only saw the table after they left and the table was a mess. a few dishes, tons of silver, tons of empty glasses and standing water everywhere. taira and i bussed it for him and then i had a discussion with him about how to better execute. i told him since he had only one table, there was no excuse for him not to take care of every little detail. he was appreciative of the feedback. hopefully all of this rubs off. on the flipside, i have been noticing how great taira has been to work with lately. she takes whatever shift she has w/o complaints and delivers. kudos to her. one other note...funny how our own employees will go bowl and keep ordering from the bar. zach and some alamo peeps gotta lane and refused to order from me. i was pretty busy with other lanes so i didn't feel like picking this battle, but c'mon man!

Support: no issues yet no challenges either

Kitchen: same as above

Top Three/Bottom Three: top: taira and laverty. bottom: sean

Saturday, September 25, 2010

Name: jem
Date: 9-25-2010
Shift: 8 karaoke
Event: fan fest/ zombie party/ dance party
Customer: eventful yet somber night with the tragic news. but with all that everyone kept it together and did well from what i could see. it was nice to see we had a lot of first-time local customers still coming in with all the fan fest madness. but everyone seemed to be having a great time. lots of happy peeps and not so much problematic peeps that we would normally see. sales looked great! so its good to see a nice blend of outta-towners and our regular clientele.

Server: lucas stepped up to bat huge today! he was a 11am and stayed well into late hours, picking up in bowling for jason and even spent an hour doing dish! kudos! and in general we were spread a little thin with jason and jonesy out but everyone pulled together and made some good solutions, busted it out and performed well! thanks to susie, taira and lucas for pulling their weight. lucas did bring it to my attention that zack was sharking tables and messing with the cover count at the host stand to get more tables. that's worth looking into. i just wish he would flip his attitude being on his last string and all. plus sean was pulling his disappearing act throughout the night. i had a few of his guests stop me throughout the night in cocktail wanting to close out their tabs. yet i had no problem finding kyle (the other cocktail) ever.

Support: these guys were all over the place. i don't know how effective they were in the floor since i was up in karaoke, but they seemed to be readily available to karaoke when we needed them.

Kitchen: on point as usual. nothing incredibly outta the normal for these guys tonight. nice work guys!

Top Three/Bottom Three: top: lucas, taira and coltraine for pulling their weight and great sales! bottom: zack and sean for reasons listed above

Friday, September 24, 2010

Name:jason
Date:9/23
Shift:630 b
Event:mc front a lot after 80s dance party after fantastic arcade
Customer: Lots of nerds from fan fest. Not too many other customers. The nerds were mostly in the dinning area as well as playing the free video games scattered throughout the store. The regular customers were???

Server: Bowling and Karaoke were dead zones. Dinning was busy bbut there were far less tables out there. Everyone seemed to hold their own.

Support:Bill and shley seemed to always stay busy. Res had nothing to do because it was super dead.

Kitchen:Everything came out smooth. One customer said they HATED the pie, but what ever.

Top Three/Bottom Three:Maria gets #1 tonight. She stayed longer than she was suppossed to and didnt complain. She did a good job and made over 2 bills as a 330 diner. Word up. Mikey gets bottom for comming in at 7 complaining about not really having a section and starting his cut duties before helping out. He then got cut before Maria 330 and everyone else who got there at 530 and such. Don't really know how that happened

Wednesday, September 22, 2010

Name:Jones
Date:8-21
Shift:SL
Event:Boobmbox. They are getting more of a crowd every week.

Customer: it was nuts when I came in to work. All of the lanes were except for one. So I only had lane 6 for two and a half hours. Bleh. A little heads up when have been nice. The private party on the lanes compained to Jem about everything, but to Devin everything was fine... weird. Mostly it was complaints about the food taking so long to come out. I think two big parties like that is too much for our tiny Kitchen.

Server: Coleslaw, and Christine rocked dining after the PP chaos. Mahmood is doing an okay job, but a lot of folk are finding him hard to work with. He gets frustrated and can't handled the hussle. Also, he got trashed and started mugging down with some drunk lady on the floor in the dining room. I told him to take that crap outside, and he did. Gross. I"m not judging, cuz I KNOW I get my drink on at work all of the time, but that was gross.

Support: Andrew walked. He was screwing up the expo and everyone was yelling at him so he took off. Steven was awesome and jumped on the dishwashing because Isabella had to go home. He definitely redeemed himself after the other night. He was super positive about it, and never complained once. We were super slow and the Galla and Ian were waaaaay to busy running their mouths. Lindsey had hr hands full with those two. She's awesome as always. I had to tell the new ones several times to turn on lanes and to put my info in the Aloha. It's difficult to keep track when you are the only one on in bowling.

Kitchen: almost went down in flames, but pulled out of it. Matt is really good at what he does and he doesn't let the stress show...

Top Three/Bottom Three: Mahmood. He is the only server that irked me tonight.

Tuesday, September 21, 2010

Name: jem
Date: 9-20-2010
Shift: 630 bowling
Event: big band and my generation premiere party
Customer: wow! crazy night for a monday! however it wasn't the biggest turn out for big band. we had newbies work that event and i think the business was good for them to get their feet wet. when the premiere party began it rivaled friday crowds. lots of free drinks and celebs make for happy peeps. i think its funny how star-struck our staff can be. shouldn't we try to keep some of our composure in uniform though? i think professionalism goes a long way with these celebs especially if want them to came back. but making a memorable experience with them is always a plus. nice work sarah jones! ;)

Server: staffing was interesting with the massive events. lotsa newbies in dining tonight. i had caught wind from some of them about mahmood bitching and complaining about almost everything. he was apparently upset about other servers doing their end but he was a bit too demonstrative to not talk to a lead or manager about it. and how does this translate to his service with guests? i have serious concerns here. it makes me nervous having him on the floor talking to guests more than he did before. am i alone on this?

also, maria brought it to my attention that when she was opening she was the only one working on the front of the house. kris, mahmood and zack all decided to go cut fruit together and not help with the tables. and apparently they didn't even knock out the fruit all that quickly either. i believe ryan was informed about this then zack slowly helped with the glasses. what can we do to light a fire under these guys who get so complacent so quickly?

Support: shley has been a wonderful addition to this group. let's do something to show her some appreciation. whad'ya say? aside from that i don't have much to report here.

Kitchen: on point as usual. managed to juggle party platters and dining orders well. even though there were a lot of peeps in the building, i don't think the kitchen was terribly challenged throughout the night. nice work!

Top Three/Bottom Three: tops go to coltraine and the party staff. guests were really happy with all the service. bottoms to zack, mahmood and kris. boys gotta pick up thier game big!

Monday, September 20, 2010

Name:Jones
Date:yesterday
Shift:SL
Event: last minute DJ that kicked a bunch of ass...

Customer:SLOW. It was super slow all night. I didn't hear of any complaints from anyone in particular.

Server: It was newbie night, so i was expecting the worse. No problems at all! Alisha, Coleslaw, and Mahmood handled it fine. It was pretty slow, though. Mahmood is not the most enthusiastic server. He acts completely different around managers and other shiftleads, but i made a point of watching him on the sly. It's like he's going through the motions or something... I never once saw him smile at a table when he greeted them. He mostly grunts. I asked Coleslaw how he was doing and she said, " Oh he's fine. He hasn't snapped or yelled at all tonight." I've been told plenty of times to watch my facial expressions and they way I talk to people and I think he needs that speech. On the other hand, he was awesome about helping out his fellow server.

Support: Steven is a hot mess. There is always something wrong with that boy. He was not on the ball last night. I bussed most of my tables and when we would ask him to clean something, he would get annoyed. Mata ended up bussing my lanes, mostly. I think he had some problems with his wisdom teeth. He needs to let us know what's ailing him daily so we know what to expect.

Kitchen: awesome as always. Eric G. is the shit. And so is Garin. Garin was bussing tables cuz he was bored. nice.

Top Three/Bottom Three: Coleslaw, Taira, and Kristen for keeping busy even thought it was super slow/ the only persone that bugged tonight was Steven the busser.

Monday, September 13, 2010

Name: Susie
Date: 9/12/10
Shift: Bowling Cl
Event: Rooster Jenkins extravaganza
Customer: It was super dead until about 9:30 when some people showed up for the show, but then died around 1230 when everything was over. The dj was awesome, but I feel sorry for him because no one stayed to listen.

Server: Zach really sucks as a karaoke server. I have found this out the past two times I was closing bowling and he closed karaoke. He does not pre bus rooms, he doesn't clean and wipe rooms in a timely manner after they leave, he leaves trays full of dirty glasses upstairs on the Aloha, not to mention when its time to pull drinks and put up chairs he is always closing out rooms late and cleaning up rooms that he never prebussed so he doesn't help with closing side work at all. And both nights that this occured, it wasn't busy. He had 2 or 3 rooms at one time. Last night was the second time in 2 weeks that he was MIA during closing duties, and I wound up putting up chairs by myself (Kristen did help last night), cleaning the sink, taking out trash and recycle, and basically doing everything because I don't want to sit around and wait for him to be done. Aaron was working the res desk and he definitely noticed that Zach is not a good karaoke server, and Kristen ran some of his drinks to a room and came out with a full tray of dirty glasses. Either he just has poor time management skills or he is just flat out lazy. I really don't think he should be scheduled karaoke shifts at all any more because there are other, newer people that would do a way better job than he is doing, such as Kristen.

Support: Steven B. was bussing, if you want to call it that. I bussed all of my own lanes and wiped all of them down myself, I don't think he cleaned anything for me. Garin is awesome, and Aaron did a great job by himself behind res. The well was running a little slow, like it does every Sunday because of the drink special.

Kitchen: It was so slow for these guys, I felt for them. Everything looked great that went out.

Top Three/Bottom Three: Zach is the bottom. I think Nicole L. is going to be our next star server. She rocks, and she never complains!!! Other 2 at the top are Kristen and Kyle for being productive and not complaining on a super slow shift.

Sunday, September 5, 2010

Name:Jones
Date: 9/4/10
Shift:SL
Event:Intergalactic Dance party. Meh. It was okay.

Customer: I didn't hear of any complaints. It was pretty slow at first, then it got hoppin' later on in the evening after cuts were made.

Server: We weren't busy enough for all of the servers to be on, but once the cuts were made in dining, everyone got busy. Everyone was running drinks and helping each other out. I think we as shift leaders need to stop signing checkouts before the section closers sign. Maybe I'm the only one who does this. I'll stop. But tonight Kristen turned in her checkout without getting Lucas to sign her out. she thought it was okay because I checked her out. I told her she still had to get both signatures. I knew what closing duties she did, but Lucas didn't know. He overreacted a bit.

Support:Good job all around.

Kitchen: They are as consistent as ever.

Top Three/Bottom Three: Everyone did a swell job tonight.

Friday, September 3, 2010

Name: Susie
Date: 9/2/10
Shift: Bowling Cl
Event: GWD, then Karaoke
Customer: It was busy as usual in Geeks, and the rest of dining was busy too. Bowling was kind of slow, and karaoke didn't get busy til late. Every week GWD fills up and we run out of tables; the table numbers in there are always different which makes it difficult to run drinks and food for people working the ballroom. I think we need to have a set floor map for this event, and we also need 3 servers working instead of 2. Every time 2 servers get super weeded and no one can really help them too much because all of the table numbers are wrong.

Zach got busy after 11, and had an issue with his last room (Xanadu) sneeking in alcohol. I know that he is new to karaoke, and for the most part he is doing awesome up there, but last night he went down in flames around last call until drink pick up time. He only had 2 rooms, but both were completely full of glasses, there was a tray full of glasses on the Aloha station upstairs, beer bottles everywhere - it was a wreck. I asked him if he was doing okay, and he said he was fine - never asked for help. Mel told him that he needs to ask for bussing help in the future, however we did not have a closing busser or a door guy to help. So I put up all the chairs by myself, not even realizing that he needed help. Anyway, we left around 2:30.

Server: Lucas had a few mistakes, but he kept telling me he was having a weird day and kept forgetting stuff. I did several comps for him, it just seemed like he couldn't get on track. I told him not to worry about it, that it happens.

Support: Steven Banks expressed to me that he has been told several times that he would move up to server, but no one has said anything to him about it since. He also hasn't heard anything about the bar back position that he said he had interest in. He seems really frustrated that he isn't getting feedback from anyone on these issues.

Bussers were good. The well got backed up a couple of times. I swear if Caitlin sits in that chair behind the res desk all night again, I might lose it! She never asks if we need help, and I rarely see her go out and wipe a lane down. She seriously sat in that chair the entire night, just waiting to get cut.

Kitchen: Wicked awesome, they handled the GWD pop well.

Top Three/Bottom Three: Top - I have to include Zach here because he did not have a room until 11, but he was helping out the dining room almost the whole time. He was greeting tables, running drinks and food, and doing side work, he was a big help. My other choices are Mikey and Nicole Brandt because they both had to stay longer than they expected to, but they didn't complain at all and did a bunch of side work. Bottom - Lucas because he couldn't really maintain his own section, let alone help anyone out or do side work. But he is usually good, I think he just had an off night.

i made mike judge laugh!

Name: Sarah
Date:8/31/10
Shift:SL
Event:Boombox- there were a few more folks than usual. I think the free shows are gonna work out better. They were great, as usual.

Customer: It was fairly slow in dining and karaoke. Bowling was "weekday steady". I had a lane upset because Kristen turned off the lanes a 1:58am. Problem was, she didn't ask if they were done and didn't tell me she was turning off the lane. They only had two frames left and it was only three people. they were pretty pissed. I don't blame them. I would like to be warned when my lanes are being shut down. Mike Judge came and bowled. He had fun and drank Amstel Light all night. He also geeked out a bit because claude coleman (ween drummer) was in the lanes next to him. Awesome!

Server: Everyone kept busy. The cuts were made pretty early, so everyone was moving and shaking to get out. I don't mind cutting everyone when its slow, but it makes me want to keep a busser on. the ballroom was a mess at closing. It was too dark to tell really or I would have made Mikey pre-buss before he left.

Support: Even though Kristen turned off the lanes a lil early, she's a damn good worker. She and Adrian helped me clean the ballroom and dining room. She helped with the chairs and wiped down tables, too. Shley is great on Expo.

Kitchen: Excellence in the slowness.

Top Three/Bottom Three: Everyone did their jobs.

Sunday, August 29, 2010

Name: jem
Date: 2/28/2010
Shift: 630 bowling
Event: 90's dance party
Customer: BUSY NIGHT!! and we def got the college students back in town. tip percentages were lower than usual for some servers. i would expect for weekends to be just as hopping for the rest of the year. from what i know it seemed like our guests were having a good time. no incidents until after close when some dude got arrested for knocking out his own friend. i guess that might be a preface of what to expect this semester?

Server: not gonna lie...i was a bit too busy to pay attention to dining. but i am really pleased with everyone's teamwork for the most part. i did hear that kristen has been a nice bright spot....great attitude, always helping even off the clock and guests LOVE her. maria did really well in cocktail...held her own and has really gotten into a good rhythm since last i worked with her before vaca. and susie destroyed it karaoke! nice work chica! on the flip side mikey once again brought his bad attitude to work. he walked with $81 on $1300 in sales largely because he had 6 or so employee meals cluster-fucked on one check and he forgot who had what. he ended up paying for it all because he didn't wanna deal with it and wanted to leave. he didn't have to do that and i don't have much sympathy. perhaps we should eval agian soon? doesn't seem fair to everyone else that he gets a top 3 schedule and brings that attitude. also lucas is still rubbing peeps the wrong way. he came up to me and told me about a table from cocktail that wanted to order a bottle of bubbles and he didn't wanna deal with it. kinda weird situation....ask me for details.

Support: i'm really digging the new direction here. shlee is a great addition. mahmood has done a great job prepping these guys. its gonna be a sad sight to see him leave this team completely.

Kitchen: no issues that i was aware of.

Top Three/Bottom Three: top - kristen, maria and susie for reasons mentioned above. bottom - mikey, lucas and sean.....still see sean half-ass his duties.

Friday, August 27, 2010

Name: Susie
Date: 08/26/10
Shift: Bowling Cl
Event: Prom, then dj
Customer: It was a pretty steady night, not too busy and not slow at all. Everything seemed to go smooth all night.

Server: I got really mad at Sean at the end of the night. He was closing karaoke, but at 2 I was the only one putting up chairs. When I was almost done, he comes out of the kitchen with the recycle and trash to take out. I think he has closed enough to know chairs go up first, right? Anyway, then I ask him to do one other thing and then I was going to do the walk through, but the next thing I know he comes out of the back with his back pack on and is headed out the door as I'm wiping something down with Mel and says "You got that Susie?" I let him go because I didn't want to lose it on him, but not cool to say the least. Taira did a great job of asking for me to check me out at the end of the night. She said "when yo have time can you take a look around and see what else I can do." Perfect!! I wish everyone did this every night.

Support: Cameron has been stepping it up since he saw he was only working 3 shifts a week. He might work out after all. Shley as the expo=awesome!
Res and host were pretty solid, except during the prom. I think 2 hosts got pulled of the front to work entry to the prom since it was a ticketed event. So they were short staffed and Brian had to help out res, even though he was the bowling tech and I needed some lanes turned off. But overall everyone did great.
Brent killed it in the well. I have been having some trouble lately with the bar serving my customers from bowling. Over the past week it has happened several times. I'm not sure if they are just not asking people where they are sitting any more or what, but a few days ago Tim B. served 1 customer 7 shots over the bar and this customer took them to Devin's karaoke room. Seriously?

Kitchen: Solid as usual.

Top Three/Bottom Three: Bottom- definitely Sean, not only for reasons mentioned above. I feel like he was just hanging out up in the karaoke hallway all night. I know he wasn't that busy, but I never saw him. Not once did I see him come down and ask people if they needed help, or run some food. Top - Nicole Brandt, Taira, and Steven Paul because they were all busy but still had time to help other people out and do side work.

Wednesday, August 25, 2010

Name: jem
Date: 8/25/2010
Shift: 630 bowling
Event: geeks
Customer: pretty mellow night. we had a smaller turn-out for geeks than we've had recently. not at any point did it ever seem overwhelming. i suppose we are now seeing the affects of school being in session. we did have an issue with one of our guests in bowling. it was a large party of older folks. the man in charge took quite an exception to us not letting one of their 12-year-old grand-daughter in the establishment. he also was irate with us for his chilled 1947 don julio shot being too watery saying "that bottle is adulterated and it is travesty that you guys are serving this!" i explained the chilling process to him, ordered him a different tequila neat even tho he wanted it chilled and then he was fine. i spent the remaning 2-hours gravelling him and his guests and had them eating outta the palm of my hand when it was all over with. dunno if we'll ever see them again but they were pleased when it was all over with.

Server: slow night....not much to work with but i am really pleased with the newbies perfomance. however what have we done to make sure execution is being done with the existing staff? seems like i get questions about the silverware plates and hot towels a bit today. didn't we discuss this in the meeting? i need you guys help with this one please.

Support: solid...mahmood is doing well and i'm pleased to see shlee on support and she was on point. mims got slammed at the beginning of geeks but pulled it out nicely. nice work you guys!

Kitchen: were never really challenged but no issues here. what are we doing to show our appreciation to these guys for their consistancy? ideas?

Top Three/Bottom Three: today wasn't very challenging for anyone. everyone did their part. i don't think anyone really stood out but like i said earlier, i am really pleased with kristen and lucas' performance. of course devin and susie were on point but that is to be expected.

Customer: It was a pretty steady night. Even after the cuts, everyone stayed busy. I didn't hear of any customer complaints

Server:Zach sold quite a few splits. Taira made the best of her lame ass section( C2) and helped out a lot. I think Maria needs to have a training touch-up on the flambe cart. she scares me when she does it. if you saw, you'd be scared too. Lucas is steady and consistent.

Support: Andrew, Steven, and Mahmood. Good job all around. Res desk was rocked it.

Kitchen: God job. No complaints there.

Top Three/Bottom Three: Brit, Zach, and Taira. No bottom. Everyone did a good job.

Server: No problems here, it was pretty slow all around.

Support: Everybody did a good job walking around and looking for things to do while it was slow.

Kitchen: Excellent as usual.

Top Three/Bottom Three:
Top-Coltraine, Zach and Brandt. Can't name a bottom server because it was so dead.

Customer: It was very slow again and everyone seemed happy. Except for the illiterate guys in Low Places. they were physically looking at the menu and ordering items that weren't there. After the third time explaining that the kitchen was closed and that we didn't have Nachos "birthday boy" said, " Are you going to cooperative at all?" I thought he was joking. They didn't order one thing off of the menu. They were LOOKING at the menu but ordering sliders, buckets of DosXX, nachos, Sam Adams... After each item, I'd say, " we don't serve that but we have..." Finally the guy glares at me and says "well why don't you just tell us what you have." I begin to, but the nice one just orders a bucket of mixed beers and four shots. As they were leaving " birthday boy points his finger at me and says I sucked and that I ruined his birthday and that he was going to complain about me. I asked what I did wrong and he said I came in with an attitude and it ruined his good time. I apologized and explained that sometimes my tone of voice can be taken the wrong way in the karaoke rooms because I have to speak loud and over screaming voices to do my job. He said, " well... i gotta do my job and.... mumble mumble.." then he walked off. his friend apologized to me and said I was just fine and that his friend was just in a pissy mood. racist. other than that, it was a swell slow evening.

Server: Everyone handled the slowness well. Maria was a bit stressed out about having to come in on her day off to train for bowling and karaoke. It showed. Apparently Lucas, Maria and Kristen all signed off with Zach, but didn't do the things they signed off for. He had to pick up their slack. We need to stress that it doesn't matter how much silverware you rolled, if you are the last cuts, you have to do everything. This is the second night in a row that the cuts slacked off on closing the place down. We can't trust the newbies without a shiftlead in dining. I don't think they would have slacked off as much if one of us were around.

Support: Shley is awesome. Cara is awesome.

Kitchen: It was too slow judged. They handled it.

Top Three/Bottom Three: Stephan and Zach/ Lucas, Kristen, and Maria for leaving Zach to pick up after them.

Customer: Twas another slow evening. Dining was the only area that had any kind of business. A group went into the Karoke rooms and one of them vomited by the skeeball machines. They were at the the bar for a while and then came to the bowling lanes. Only six of them bowled and i served two blue moons, a crown and coke and a margarita. Then they went back to the bar and after a while got a room. Jason only served a couple of rounds. That guy just couldn't handle his liquor. I was talking with him on a few minutes before he puked and he seemed alright. nope. Mel ( like an effin' champ) cleaned up the puke. Thanks Mel! Also, I had few people who couldn't understand that the lanes were for people bowling only. They kept saying, " oh we'll move if someone comes." I explained that the lanes need to be clean and empty in case people want to bowl and they just thought I was being bitchy. racists. it's even more hard at closing time. Is it possbile to get a " This section is closed" sign for after one when the lanes are empty?

Server: I've noticed Kris's drinks dying in the well more than once tonight. one table got their food before they got a drink. I saw the drink in the well and the ticket time was a bout ten minutes long. No good. He needs to learn a bit more about multi-tasking. Sean needs to chill on asking to get cut as soon as the closers get to work. Jason said that he wasn't even on the clock before Sean was asking to get out of there. Kristen and Lucas did a good job tonight in dining. They are going to work out super well. There was some silverware left over that Kristen got hosed on. It was hidden and we didn't see it until after everyone left. She's gonna roll it when she gets in tomorrow. now she knows to check everyone out before they leave. I'm at fault also, for not checking.

Support: Shley did a great job tonight. She talks a lot, but she was really good at walking around and making sure everything was clean. Kudos. Caitlin and Siobahn were having too much fun on the arcade games tonight. I know it was slow, but the res desk was making too many mistakes to be fooling around on the arcade games. Lanes weren't turned on, and they kept sending lanes to Coltrane after she was cut. I'd tell them that lanes were broken and they'd forget to tell Brian.

Kitchen: Great job. They get better and better every week.

Top Three/Bottom Three: Kristen and Lucas are new and already I have no complaints. Good job to them. Sean and Kris need to step it up. Sean is a good guy and a decent worker, but I think his mind is constantly elsewhere. Kris has a lack of consistency.

Customer: decently busy sunday, yay.. Everything went fine until then end of the night when some drunk guy started mouthing off to some other customers. At first he was doing it to people that he knew, but then sat down and said something rude to a couple of ladies and had to get slapped by one and then excorted out. I went and chatted it up with the ladies and they seemed pretty cool about what happened. I think Zach went and talked to them also but that was more trying to obtain phone numbers, either way no lack of highball love sent their way.

Server: Kristen and Lucas are going to be great. I had fun training Kristen and I think the sooner the new stuff gets implemented the better off we all will be.

Support: Slhey's first day. She is going to rock. i hope she likes it well enough.

Kitchen:
Seemed to run pretty smooth.

Top Three/Bottom Three: Everyone seemed to rock it. It wasnt super busy more steady than anything else. I noticed a lot of teamwork. I saw maria and kris selling a lot of the specials. They both kind of rocked, so i'll give them props. Taira seems to one trip herself sometimes. I noticed she had drinks in the well, she would come get waters, take those to the table. Then come back for the drinks that were sitting in well. Or there would be drinks for different tables in same sections and she would only take the drinks for 1 table. This happened more than once, and I found that odd

Shift: Bowling close
Event: 80's dance party
Customer: We got slammed around 9 o'clock and the dance party was super busy. Patrick was the mid bowler. Around 11 he and I both got stuck in separate check hell for a good 20 minutes. It was really frustrating because some people were writing items and some people were writing amounts, and there were some people putting names with things and then not putting cards in. If we had had a reservation directly after these parties we would have delayed the reservation by about 30 minutes. I talked to Adrian about maybe making a 6 person limit on separate checks in bowling and karaoke only. It isn't that hard to get out a cell phone and figure out what each person owes for the fees and then adding up the drinks that each person had. As a server, it is also difficult when you do split checks from the beginning because then you have one check with just fees and shoes and you usually don't get tipped on that, but we have to pay 4% tip share on that tab. These are just some thoughts, I would love to hear some feedback.
There were a couple of drunk people, and one guy cut his hand in the bathroom on a glass, and he had to go get stitches.

Server: Dining seemed to do okay as far as side work goes, and it wasn't really busy until later when people were mainly drinking.

Support: Mahmood had to work extra hard last night because Cameron was the only other busser on and he wasn't staying really busy. Mahmood finally told him that he had to get a full tray of glasses before he could come back to dish. Eric did a great job as usual, and Mike P killed it in the well. I actually didn't have any issues with fees and such from the res desk, and they cleaned a lot in bowling.

Kitchen: I didn't have a lot of food orders, and I didn't hear of any long ticket times. They seemed to do well.

Top Three/Bottom Three: Top- Patrick, Coltraine and Steven Paul. Bottom- Taira is the only one I can name here. She hardly ever runs food (unless its her own), I rarely hear her offer help to others, and she just seems to maintain her own section.

Customer: kind of a bland friday night. started strong but fizzled before midnight. i'm hoping peeps are not getting used to us not having an event on fridays. i think it is important to have a dance night draw on fridays going forward.

Server: pat is still bringing his a-game. on top of steeping up his game with service, he was a big help with teamwork in dining. wish he was sticking around. also the training program seems to be a success. the trainers were telling me that they were impressed with the trainees' knowledge and ability to sell. coltrain even joked to me that she needs to do the program so these newbies won't be showing her up! i'm down to schedule some classes for everyone else who's interested when i get back. good to see some positive return tho. i have a feeling that lucas is gonna be a top performer rather quickly.

Support: mahmood is doing a good job with training the new guy. i think the newest one is gonna be a stud. well was struggling a little bit today. had a stretch of 10+ minute tickets.

Kitchen: no quality issues that i was aware of. however i did do a comp for someone whose salad never made it to the table.

Top Three/Bottom Three: pat, brit and mikey. these guys killed it with what they had and were a big help all around. otherwise it wasn't busy enough to have any major issues.

Customer: I didn't hear of any complaints tonight about food or service. However, I had a coupla lanes complain about the music. When I explained that it was an ipod and that we weren't aloud to change it, they were slightly annoyed. They said the last time they were here we played oldies and it was fun. I agreed. People like to dance when they are drinking and bowling. I know that Henri's ipod isn't going anywhere, but can we email him with suggestions about music? A nice mix of funk, oldies, and classic rock would be nice. Or even if he switched it up a bit. it's like working at a GAP.

Server: Cuts were made pretty early because it was drastically slow. I was one on in bowling at 930 and never got busy. Dining was DEAD like disco, man. NO ONE was in there.

Support: When it's this slow I should not have to bus ANY of my tables, I tell you what... But I understand that its hard to keep making the circle over and over. Andrew needs to be more vocal about asking people if they need help.

Kitchen: Smooth like Billy D.

Top Three/Bottom Three: Kyle and Zach get top three. We were so slow and they never complained. I barely had to do anything as the closer.

Customer: Man, it was sooooo busy!! There were a couple of customer complaints about waiting a long time for food and such. Also, there were a lot of picky customers because I comped off several "customer no likes" on drinks.

Server: Everyone in dining was slammed! There was kind of a late dinner pop, but when it happened it exploded. Taira went down in flames in the cocktail area. She was by herself and it kind of filled up at once, tables were moving and she doesn't really understand the pivot system. I could see this coming and tried to help her stay out of the weeds as much as possible (because I only had 2 lanes at the time) but she kept letting herself get frustrated over the pivot system. Maybe if she would have stayed for the Aloha demonstration after the meeting, or asked more questions about it, this would not be an issue. Billie really saved her once I got busy again in bowling.
Also, Jem told me of an issue with Zach taking food from Lucas, who was training on the expo line, and running the food to his table instead of Jem's. That resulted in 81(Jem's table) and 55 (Zach's table) to sit without complete food on the table for several minutes. I believe Chevy did some comp's to accomodate the guests. Servers do not need to intercept new people running food from the expo, unless you follow them to your table and take it from there.
Finally, toward the end of the night Mikey kind of got in a mood because he had 2 lanes that wanted to pay individually with cash everytime they ordered a drink. I understand that this can be frustrating and it will happen occassionally, but there are also different ways to explain to the guests that we are smart enough to keep everyone's tabs separate. Then, he wanted to transfer me the lane fees and shoes for those lanes so he could get off and have a drink. I was going to do it, but I think he might have realized that was unfair. Can I please get some back up that it is totally up to the closer to take transferred lanes or rooms? Gimme some feedback please.

Support: New people everywhere! I think they are all doing a great job. The well was rockin all night long and Rob did an awesome job back there.

Kitchen: Some long ticket times, but nothing too serious.

Top Three/Bottom Three: Jem, Walker and Jonesy cause they are the bomb.com/ Kris, Taira and Mikey. Kris and Taira just seemed like they were weeded out all night and never had time to do any side work or help anyone out.

Customer: wow! good to see friday's busy again! even without a dance party on the later part of the night, it seemed every part of the establishment was busy. not to say that i think it would be a good idea to slide another weekend night without a dj, but we did well. concierge position is def a big help. with adrian taking care of guest's transitions between depts gave me a ton more time to attend to guests. i just wanna make sure all the servers know how to utilize him well. he certainly had an affect on guest satisfaction all night. but either we're letting people in drunk or we may have an over-serving issue. we had to boot 2 db's out for unruly behavior and i heard about someone puking. let's be mindful of this.

Server: i didn't hear or know of many issues with servers. instead i know a handful really stepped their game up. one thing i should mention is that we need to recognize our strong servers who slip under the radar because they consistently do well without issues. some of these servers are feeling a bit unappreciated. i get this vibe that some of our string servers that we lean on are looking for options out and that would be a shame if we lost them. otherwise, steven paul, pat and brit had great nights, happy guests and made some good money. there are a couple peeps who are being resistant to using the pivots. however everyone else is doing their best to do the program.

Support: mahmood is doing a great job training and hopefully that means good things for the future of support staff. we just need to get the rest of the staff on the same page. i think mahmood sets the standard for work expectaions, but his training but him at the exceeding expectations category. nice work! bar seemed understaffed towards the end of the night. aaron kept getting pulled off the well and we were having close to 10 minute beer tickets. guests were getting a bit annoyed with the long ticket times.

Kitchen: smooth sailing as usual. this is as close to a machine as we got in any dept.

Top Three/Bottom Three: steven paul, brit and pat killed it! awesome sales, awesome guest response! major kudos! i wish i knew who was specifically not using pivots but mikey was grumbling about doing it with how busy it was.

Shift: 630 B

Event: Boom Box- Not many people showed. The band is brilliant, but it's just not happening yet.

Customer: It was another slow night. Around eleven bowling and karaoke got a little pop. A customer decided to bowl without any shoes. When I told him it was highly against the rules he laughed at me and said he wanted a manager to come and tell him that. He wasn't mad, he just really thought I was making shit up. Then he came and apologized and basically said that he disregarded the rules because he doesn't think of highball as a real bowling alley. I think a lot of people feel this way.

Server: Everyone was cut fairly early. Maria handled boom box all by her lonesome and did a swell job. Sean asked to be cut as soon as I walked in. I wasn't even on the clock yet. That bugs me when he JUST started getting bowling and karaoke shifts. Everyone seems to be catching on to the new seating system. It is very annoying to split checks now, but we'll get it eventually.

Support: Andrew doesn't know how to multi-task. Plain and simple.

Kitchen: Smooth like butter. I didn't hear of any complaints.

Top Three/Bottom Three: Everyone was on task. It's hard to rank people when nothing is challenging them.

I told them I would find their server and that I was really sorry they had to wait. everything seemed to be fine after that. *MTG* I think we need to talk about Sean.

Server: Jonsey had a room get into a fight wit each other and run out without paying the tab. We found them in the parking lot (Frank was with us) and got payment from them. they were very rude to each other...not to us though.

Brit Walker got cut right before a impromptu Bottle service, she stayed on over an hour helping out with that and everyone else. Great job Britt!!!

Support: Mahmood is awesome. He should get an app notice for doing all of the close bus shifts this weekend due to Steven being hurt and lack of other bussers.

Customer: It was soooooo slow!! We were 1 on in bowling before midnight. I got a 2 lane party around 12 that came from Casbah and they were pretty drunk so I cut them off. They of course tried to order from the bar, but I told Aaron who they were so he didn't serve them. One of the guys did lie to him though and said he was with another party, so I got Mel to explain that they were cut off. She always has my back, its awesome.

Server: Everyone was just trying to stay positive and make it through because it was so slow and it was a night of bad tippers, for the most part.

Support: I think Jonesy told me that once she was off she sat at the bar for over 5 minutes before anyone acknowledged her because the bar was so busy cleaning. She only told me this because customers were there waiting as well. Bussers were on their game tonight, and Eric was solid in the expo line again. Res desk was hectic because Katrina had to do everything. Laura is still really slow back there and just kind of stands around waiting for someone to tell her what to do. Katrina was doing everything except seating people at lanes or rooms. Katrina rocks, but she was frustrated.

Kitchen: It was really slow, so no issues here.

Top Three/Bottom Three: Mikey, Brittany Walker and Coltraine. Bottom - Sean is really the only one here. He just kind of stood around all night and I never really saw him do any side work.

Customer: decent thursday night with geeks. lots of big parties in dining that moved to karaoke or bowling. For the most part guests were very pleased from what i know. there were a few couples in bowling that were getting upset with how long drinks were taking which made it difficult to keep them from going to the bar.

Server: well i had 2 large parties that came from dining that were upset that they weren't informed about the texas pints specials until they got to bowling with me and adrian. i know one of them was with dawn. i think that as we are enforcing the new programs that pushing our drink specials nights should be included.

Support: i think i had a busser come to bowling to help me out twice all night. i'm pretty much getting used to bussing my own lanes these days. other important note tho....res desk has been getting into some bad habits lately. just incomplete work like bringing guests to lanes and forgetting to turn on the lane or bring scorecards or explain anything. katrina sat a lane w/o scorecards or turning on the lane. adrian pointed that out to her and she was like "meh.....it happens." what is up with that? that's not acceptable. if she doesn't care, why is she here? these two areas need a lot of attention before it gets even worse.

Kitchen: kitchen was a strength tonight. had a lot of large parties and private parties and got things out on time with no to little quality issuse. i didn't have to comp any food tonight.

Top Three/Bottom Three: top - pat, devin and steven. all of them were pretty busy and still found time to help out. bottom 3 - dawn and katrina...i know katrina's not a server but this needed to be noted. dawn was having problems managing her big tops and weren't telling them about specials.

Customer: It was a pretty wacky night. There were a few reservations in bowling and karaoke that were mixed up. We had to offer free champagne and comp fees to make a bride happy. when I got the wedding party in Bowling they seemed pretty happy. We had to kick out a party in the Casbah for bringing in a case of Budlight. How in the heck did they sneak a CASE of BudLight in the bar? Something is not happening at the door. Do we have to start checking bags before they go up in karaoke? Is that legal? Also, can we start deny guests karaoke rooms if they are obviously intoxicated?

Server: It was pretty steady all night. Everyone did a good job with the pace. Zach is excelling as a server. Jem says he sells pretty well and we all agree that he's ready to train for bowling and karaoke.

Support: No complaints on my side. They did an excellent job last night.

Customer: Super busy for geeks. Enough so that the bar seemed weeded a lot. Not really their fault but if geeks stays as busy as it was, we may need some bar help in the well. A couple alamo servers came up to me at the end of the night and told me that they heard some customers complaining. A couple of girls were at a big top which consisted of 50, 60 and 70 i believe and apprently had to go to the bar and order their drinks. Unacceptable, especially since mel did not cut many dining servers at that time, if any at all. Rob had to serve them so he might have more info. I also heard about a couple that was complaining about their service while they were outside smoking. I don't know where they were sitting, because this was all second hand, but no bueno.

Server:
Super busy, especially in dining. Pat and Taira rocked geeks as good as they could. We had to move several tables from dining into the ballroom to accommodate everyone, so a lot of the table numbers were confusing which we will have to address if geeks stays as busy as it was. I mentioned the bad service above. Not sure who it was though, tried. Im inclined to think it was Zach, because Kris said he never had a big top.

Support:
Busers were terrible at times. Ezra is a parasite that does nothing at times. When we were frantically trying to move tables she and Andrew were chatting it up and the back. Chevy was pissed and we were all trying to find them. Hard to want to pay tip share when shit like this goes down.

Seemed to hold their own on a busy night. Hooray

Customer: painfully slow night everywhere except the private party and karaoke. kinda strange tho for being happy hour all day. i think we should have more of an effort to promote this night....especially the servers who usually work wednesdays. tickets are low but if we're super packed we should all make money. otherwise it seems that the PP was very pleased when they left and no real issues came up that i was aware of.

Server: man i wish i had more to report but it was slow and everyone managed their guests ok. there were a few server error rings by sean and it did seem like peeps were putting themselves on an island. but it wasn't that busy so it probably didn't matter.

Support: mamoot did really well as usual. i wish the others would follow his example.

Kitchen: no issues here....but really didn't have any wave of tickets to challenge them.

Top Three/Bottom Three: susie, steven paul and PP staff. they were probably the only ones even somewhat busy and definitely held thier ground. i'm sorry...i wish there was more to work with but it was a rather uneventful night.

Server: sean, kris and zach performed well! sean seems to be picking up his game a bit. it seems like you gotta keep him busy to stay focused i suppose. zach had the busy section in dining and did well and kris seems to be making good strides. overall not terribly busy outside of dining so everything went along smoothly....i would hope so with 4 shift leads scheduled!

Support: didn't have any issues with support. seemed to be a pace steven could stay effective with.

Kitchen: kitchen did well. no large parties today and food quality tonight was up to par. nice work!

Top Three/Bottom Three: i'm giving kuddos to sean, zach and kris for steady improvement on a quasi-busy shift with no errors to my knowledge. not to take away anything from the leads, but leads are expected to perform well anyways.

Customer: There was a private party for most of the night in the Ballroom. Everyone seemed quite happy. Besides that, it was extremely slow. The PP loved the cheesy cover band. The band was alright for a sixth street cover band. The covered Easy-E and that gave them at least five cool points.

Server: No complaints. We need remind the closers to tell everyone to check out with the SL before they leave.

Support: Mahmood is very apprehensive about bussing lanes while there are still people there. I tried to explain to him that patrons tend to linger in the lanes and it helps to get them to leave when the busser is there clearing the tables. I told him that no server would ask him to clear a lane unless it was time, but he still didn't seem to get it. He seemed to think that it didn't matter as long as there wasn't a reservation waiting. I've lost money over this issue before with him and I feel that if I bring it up again, he'll just think i'm being a nag.

Kitchen: No problems there. They rocked the slowness.

Top Three/Bottom Three: Suzie, Zach, Taira. She hardly made any money, but she was helping everyone out and running drinks like crazy.

Server: (Shift Note) People need to be doing side work, for real! Seems like Thurs - Sat people were slacking. Fruit not getting re-stocked at the bar, low ice, empty water pitchers, etc. Plenty of people waiting for their drinks at the bar though. Another Shift Note - not enough fruit is being cut Thurs - Sat as well. The par needs to be increased and/or the new people that open need to check and see if the bar has stocked fruit before cutting fruit. I think we could up the par for lemon wheels because of all the new drinks with lemon wheels on them, and twists too.

Support: Bussers did a pretty good job tonight! The bar got overwhelmed around 12:30 or 1 and Billie and Chevy had to get behind the bar and help out. They got through it and I think everything came out correct.

Kitchen: There were some issues with long cook times tonight. I had a 25 minute fries ticket because they forgot about it. I also had a forty minute banana split and Walker had a 40 minute fish special. They were really busy for a little while and then, as usual, it died down towards the end.

Top Three/Bottom Three:
Top - Jonesy, Steven Paul, and Mahmood cause they were the bomb.com I think that people in dining just need to step up the side work, but I can't really name a bottom three.

Name:Sarah

Date: july 16th

Shift: 630 B CL

Event: The Blue Hit

Customer: It was pretty slow for a friday. If there were any complaints from customers, I didn't hear any. I noticed though, with the dining tables in the bowling lanes, customers seem to expect stellar dining service. Not that they don't deserve it, but i wish there was some way to let them know that those tables are treated as a cocktail section.

Server: It seems that some of the servers are having trouble with side duties. Suzie and Coltrane were the only servers re-stocking the ice, garnishes, etc. Aren't certain duties assigned to certain sections? Maybe we should have the SL go around reminding everyone of their specific duty. That way when it's not done, we can playfully remind them in a non-aggressive way. I hate to say this, but I think the closers are getting a little carried away with leaving before two. Sean wanted me to close his section down with only thirty minutes left. He clocked out with ten minutes left in his shift and with dirty tables in the dining room. Unless you are absolutely done with all of your duties, then you should not be asking to leave at one-thirty five. Yes, i said i'd put the chairs, but no he did not check out with me.

Support: They were fine. Andrew and Mahmood were exactly where they were supposed to be at all times it seemed.

Kitchen: everything went smooth. Their was a last minuted BS and they pumped it all out with ease. (giggle)

Top Three: Suzie, Coltrane and Kyle
Bottom Two: Sean kinda irked me when he took off with ten minutes left in his shift. Jason took off without getting checked out, but in his defense, he was sick.

Name:Sarah J
Date:July 12th
Shift: 6:30 B CL
Event:ROTBB

Customer: It was pretty steady for a Monday. There was a big 50 top in the dining room that Doug and Zach handled pretty well. There were only a couple of comps for some of the classic drinks. I don't people are reading the menu very well. All they see are $5 drinks and they pick something that sounds good. I've had to comp few drinks because people didn't know what they were getting into. Maybe we should have a tutorial on the drinks and how to sell them and figure which ones cater to certain folks..

Server: Everyone seemed really busy, but the sales weren't so high. As always with the ROT crowd, people were impatient, but that's just because they are old and don't remember what their server looks like. With that being said, Jem had a hard time finding Dawn. Apparently she kept pulling houdini's all night and Jem was basically taking care of all of her tables. He said he could've handled Cocktail all by himself, that's how much she was gone. She made the mistake of thinking she could wander around as soon as her tables were okay. Nope. Those people are OLD.As soon as you turn your back, they're wondering where their server is and bugging everyone in a highball shirt. And they LIE. They'll say, " I haven't seen my server in like, 20 minutes. Can you help me?" Bull. I think we need to stress how important it is for the servers to stay in close to cocktail on Mondays.

Support: I pretty much bussed 90% of my lanes. If it wasn't me, it was the res desk folks which is awesome by the way. Ezra got cut pretty early and it was only Andrew on. It's not that he wasn't trying, he was just really busy bussing dining. Karaoke and Bowling got NO support love. Maybe the busser shouldn't get cut until after dinner rush. I'm not sure why Ezra was cut so early, but it's the second time it's happened. And both times it wasn't a good idea.

Kitchen: The 50 top had them pretty busy for a good hour or so, but the food was still coming out at reasonable times. Steven handled expo pretty well and everyone was around to help take the food out.

Bar: I added this one because I wanted to mention something that bothered me slightly. I understand that the bartenders want to get the hell out of dodge as soon as possible and it helps if they break down the server well early in the night. However, it was still busy in dining as well as Bowling when they announced that they were breaking down the well. Britt and I had full lanes, Nicole had three or four rooms and dining was steady up until about eleven. The bartenders were so busy breaking down and cleaning that they were neglecting the well and customers. This doesn't happen very often, but when it does, it sucks. I don't mind carrying my tickets to the front well, but it needs to happen when we are dead and only when we are dead.

Top Three: Jem, Kris, and Zach. Kris improved quite a bit and Zach handled the big top quite well.
Bottom Three: Dawn, Doug and Nicole G. Dawn was nowhere to be found for a while, Doug never does side work when he's on the floor, and Nicole G. bugged me about leaving with only forty minutes left on her shift. Really? She even had a room still that she wanted to close out and have me take. I don't mind cutting the karaoke closer when it's dead but not when you still have a room.
Name: Susie Q
Date: 7/14/10
Shift: Bowling Close
Event: Blues Dance Party
Customer:
It was really slow, other than the pro-dancers here for blues. I had one drunk lady that got a glass of wine from someone else and came to my section. She was fine, other than being drunk, and I think her husband drank her wine anyway. I had one minor toward the end of the night that tried to wash his X's off, so I had Aaron go over there and remark him.

Server:
For the most part everyone stayed productive. Dining got an earlier dinner pop and then it slowed down around 9. Can managers please start looking to see if the late cut people have signatures. Even though the closing cocktail and other people that leave late usually do everything, it is nice to be asked if there is anything else that I need them to do.

Support:
Pretty slow night, but while they were here they did a good job overall.

Kitchen:
Got a semi-big pop for dinner while trying to set up for a big PP, but handled it very well. No really long ticket times and everything looked good.

Top Three/Bottom Three:
Everyone did a pretty good job tonight, no complaints.

Wednesday, July 14, 2010

Name: Jem
Date: 7-13-2010
Shift: 630 bowling
Event: boom box
Customer: it was the first night of boom box. had a decent turn out but i do expect this to blow up! the crowd they did bring were definitely bringing some business especially post-show. bowling and karaoke were moderately busy. not so much for dining. lots of first-timers in bowling and i do foresee a lot of future repeat business

Server: sean was upset about being scheduled 5:30 in cocktail and there was a private party til 7 there. he does have a legitimate gripe. perhaps we should schedule accordingly? other than that, everything seemed to go smoothly.

Support: i did have a point at bowling when i had all 8 lanes and 5 got up at the same time including one large party. Ezra pulled a houdini on me. thank god we didnt have a wait in bowling or i would have been screwed! i did manage but support would have been nice!

Kitchen: kitchen seemed on point today. didnt have to comp any dislikes which is a good sign. and we didn't have any long ticket times. but it wasn't terribly busy either.

Top Three/Bottom Three: top - mikey and steven paul. mikey had karaoke to himself tonight and still had time to help out. he's on his game. lots of newbies scheduled today, but no massive errors or concerns as far as i know.

Name: Jem
Date: 7-11-2010
Shift: 7-10 6:30 bowling
Event: DJ Mel
Customer: busy night! vibe around the restaurant was very lively. DJ Mel certainly set the tone for the late night. everyone seemed to be enjoying themselves.

Server: there still seem s to be an issue with communication re: cuts. we really should discuss a proper protocol for people getting cut so we don't have anymore long greet times or missed tables. also zach stayed and vclosed cocktail for dawn after it went down to closer only and wasn't able to make any money after that cuz all the guests were using their bar tabs. perhaps we should discuss something in a training situation to prevent that from happening? will discuss on thursday. also i'm concerned about the newbies putting themselves on an island and not asking for help until it's too late or they don't know what they need help with. we should follow-up with them about being proactive before they take the next step to bowling/karaoke.

Support: res desk had their hands full with multiple lane reso's at the same time but did well considering. i can't speak for dining or karaoke, but bussers were attentive to bowling and the multiple lanes getting up at the same time.

Kitchen: went well from what i could see. however, they were caught off-guard with my midnight bottle-service party. i gave them 45 minutes notice but a communication issue indeed.

Top Three/Bottom Three: top - mikey, jason, rob, bottom - dawn, zach, sean

Name: Jason
Date: July 9
Shift: July 8 6:30 bowler
Event: that karaoke clown
Customer: Decently slow night. Some business in bowling. Karaoke seemed to suffer with the free karaoke on the main stage. Sean said he was on top of his game and still made no tacos cocktailing. I did see a lot of people ignore him and go to bar. Ballroom was pretty much empty by 1:30.

Server:
I know that Dawn had some problems. But that she got a bunch of tables all at once. I really want to get feedback from people to see how the newbies are doing. Haven't worked along side them yet so I will do a little digging.

Support:
Renee + Brian = easy night for me. And Adrian at host. Loved every second of it. Thank you Allie

Kitchen: Did well, it was slow

Top Three/Bottom Three: Top 3 Mikey/ Steven/ Devin Bottom Sean/ Zack/ Dawn

Monday, July 5, 2010

Name:Sarah J

Date: 7/4/10

Shift: 630 B SL

Event: Aboslutely Nuthin

Customer:It was as slow as a snail in a pile of poop. There was a tiny pop for the bar about an hour after the fireworks. Perfect view , by the way. A group was kicked out of Taira's karaoke room because one of the girls was drunk. Taira tried to be nice and serve her one drink because the group promised she wasn't driving, but she screamed into the microphone calling Taira a bitch so Taira decided she was cut off. Other than that, everything was gravy.

Server: The new guys are doing a great job. Everyone is staying off of their phones and really stepping up with the helping each other out.

Support: The guys are getting better. Andrew is a little all over the place. He needs to learn how to multi-task. For instance, he'll have a bus tub that's half full and will walk right past a skeeball table full of empty drinks. Also, NO ONE pre-busses.

Kitchen: they rocked it. it was slow.

Top Three/Bottom Three: it was too slow for anyone to screw up. everyone was awesome.

Sunday, June 20, 2010

Name: Susie
Date: 6/19/10
Shift: Bowling Close
Event: Glow in the Dark Dance Party
Customer: I had a rude lady as my first lane at 6:30. She was complaining about only being able to bowl for thirty minutes because there was a reservation at 7. Billie talked to her and she was rude to her as well. I just had to walk away while the lady was talking because no matter what I said she still wanted to argue. They stiffed me and left, but I didn't know what I could do to make them happy. After that, everything went smooth.

Server: Everyone did a great job last night. People were running food, no one really needed help, it was a really pleasant evening. Taira did get a little busy, and instead of asking for help she just seemed kind of flustered. But she did good overall.

Support: Mahmoud is the bomb!!!! Not just saying that because we go way back, he runs laps around the other bussers and I think he should train all new bussers. Maybe he should even re-train the other bussers we already have because he seriously does a way better job. I am also hearing this from all of the other servers.
The res desk had some issues, like quoting a karaoke room for 1:15 am and seating a completely dirty lane (I mean dirty plates and glasses and stuff). I think they just need to slow down and double check things before they do them. Do they take a test over host/res duties and policies, etc? If not, I think that would be a good idea.

Kitchen: Jem had a lot of issues with customers not liking their food. I know there was one instance where he had some scallops come out under cooked, they wanted their scallops remade because they had their heart set on them and then they came out under cooked again. We have got to get on this scallop problem. It seems like half the time the people love the scallops and the other half of the time they complain that they are under done or that they taste "fishy".

Top Three/Bottom Three:
top three- Mena, Stephen and Walker because they were super busy and still had time to help out other peeps and do side work. I love them! I can't really say there was one bottom server, like I said Taira could have asked for help but overall she did awesome.

What? It's busy on a Sunday?

Name:Sarah Y. Jones

Date: May 30th

Shift: 6:30 B SL

Event: Fuck Town

Customer: It was randomly busy last night. Fuck Town brought quite a few people in. About the same as GWD. Everyone seemed please. Ezra had trouble with a table going to the bar. This is a constant battle and I think everyone is at their wits end about it. Also one of charcuterie plates took 30 mins. I had one group leave because the lanes kept jamming. Pinsetter....please?!?! The skeeball machines are starting to piss people off. We advertise skeeball, but everyday they are broken down. A couple were a little miffed about it. They left, mumbling something about The Scoot Inn's machines being superior. Other than that, everyone seemed quite satisfied.

Server: Everyone did a really great job adjusting to the random business. Sean was the only one who's sales didn't exceed $500. The server well stayed stocked for the most part and everyone did their part in running drinks and food. Mena had all six rooms full all night and handled it quite well. All in all, we were exhausted by the end of the night, but no one got weeded ( except for Aaron at the well) and their were no complaints.

Support: Steven just doesn't hack it. He needs to be trained again or something. I bussed every single one of my lanes. I honestly thought he was cut and just kinda hangin' out. He's a sweet guy, but he really needs a good talkin' to. Danny rocked the expo.

Kitchen: Other than the 30min char plate, everything was smooth.

Top Three/Bottom Three: Top: Sean hardly made any money, but he closed this place down like a pro. I barely had to do anything. He wasn't even that upset or bitter. He had a good attitude and that goes a long way, when everyone is bitching in your ear constantly. Bwalk was constantly busy with big tops but had time to help others all night. Mena Handled karaoke all by herself and never once complained. I have no bottom three. Everyone did a really good job.

Saturday, May 29, 2010

Shift: bowling close
Event: dance party/dj
Customer:
Everything seemed to go pretty smooth, and I didn't hear of any complaints. One reservation for midnight karaoke did not make it on the roster, but they were pretty understanding. I think they got in around 12:30.

Server:
I got a full tray of drinks spilled on me around 8:30. I was soaked, but the customer was okay and asked if I was okay.

Ezra switched from first cut dining to the mid bowler and then was complaining at 11:30 that she wasn't cut yet. On the weekends the mid bowler usually doesn't get cut, but she was really pissed. She had also been complaining all night about the res desk moving reservations to different lanes. I told her that this happens and you have to roll with it, the lanes get filled up regardless of reservations. Her attitude has been a bit much lately, even for her.

Steven had a bottle service at 10:00 that went to my lanes after, and almost all of them were super drunk. They ended up getting kicked out because two guys were laying down and refused to get up. Steven is usually pretty good about cutting peeps off, but it is hard to do that when they reserved a bottle service. Not sure if anything can be done about this, but thought I would mention it.

I mentioned this to Billie, but the 3:30 diners don't really get a lot of tables before the 5:30's come one. Then when the 5:30's get there, the hosts skip the 3:30's to try and give everyone an equal amount of tables. But I don't think everyone should have an equal amount of tables because the 3:30's get cut first and the 5:30's will get a lot more tables later in the night. Maybe we could talk to the hosts about this; the servers feel like they can't talk to the hosts when there is an issue like this because they can get defensive.

Support:
So this has been a problem for awhile now - when we have new people in the reservation desk training on the weekends it always gets crazy and confusing when the first person gets cut because then it is just one person with experience and the new person. Maybe this can be resolved with scheduling some how, but it can get frustrating for servers.

I'm sad Matt is leaving because I think he is one of the best bussers we have. Hopefully the next one we get is as good as him!

Kitchen:
Everything seemed to go smooth here, and I didn't hear of any outrageously long ticket times.

Top Three/Bottom Three:
Top - Leary, Mikey and Steven because they always had time to do sidework and help others.
Bottom - Ezra for complaining all the time, and I think that's it. Everyone pretty much did a good job last night, I think.

Green Berets and Other Interesting Things About Monday

Name:Sarah Yvonne Jones
Date: 5/3/10
Shift: Bowling Close
Event: Big Band

Customer: No customer complaints that I knew of. It was pretty slow and everyone seemed satisfied. Sean got the shaft when a customer bolted. Apparently a customer's girlfriend ordered shots for the two of them and then got pissed and left before she paid for the shots. When Sean asked the dude about the bill, the guy told Sean that his girlfriend was supposed to pay. Then the jackass bolted out the door as soon as Sean turned his back. This my problem, Sean saw the girlfriend leave, so why didn't he just tell the guy, " Well, your girlfriend left so..." Pssht. Amateurs. In other news, I got a late night room in Xanadu full of Green Berets. They were very excited about singing classic female r&b songs and vanilla ice... One of them got his leg shot off in Afghanistan, and another took four bullets to the chest. They tipped well, and were very polite. Loud. But polite.

Server: Everyone got cut really early. Karla was in the dining room by herself and handled it just fine. Britt Wright said she was pretty busy in cocktail, and that she was especially frustrated about Sean's tables flagging her down asking for drinks. He is way too relaxed in his position. I peeped him lounging at the Hosts Desk, playing on his phone in reservations. All things we do, but only when we aren't busy. He was fairly busy. He thinks he has it all down, and he needs to realize that he doesn't.

Support:Eric W. was on expo so all was fine there. Danny is awesome.

Kitchen: It was uber-slow. So there was no problem with these guys. I don't understand why the all-star crew ( BrianW, JJ, Shlii, Ericx2,)was working on a Monday...

Top Three/Bottom Three: Everyone got cut pretty early so there wasn't really much to judge. Britt and Karla were on the ball. Sean and Nicole were really distracted by their cell phones...

Thursday, April 22, 2010

Name:Susie Harrison
Date:4/22/2010
Shift:Bowling Close
Event:Wilchester wedding/ dj

Customer:Rachel had one table that found a hair on their ribs and she forgot to ring in one of their meatloaf sammies without mayo. Chevy talked to them and handled the comp. Everything else seemed to go smooth.

Server:It was slow for a Thursday, but it was steady for awhile. Everyone seemed to stay busy and do side work, so it was a good night here. I trained Aaron Frescas for a minute after Steven got cut, he is gonna do awesome. Really knowledgable and learns things quickly.

Support:Eric G was the expo, and he was awesome as usual.

Kitchen: They got a decent dinner pop and all the food went out fast and correct. There was a new guy on pantry, Eric, he was kinda slow but Eric G helped him out.

Top Three/Bottom Three:
Top Three - Aaron Frescas, Mikey and Maya did great tonight.
Bottom Three - Lindsey is the only one because she was first cut, wasn't busy and didn't find any running duties or anything else to do during down time.

Wednesday 4/21/10

Name: Susie Harrison
Date: 4/21/2010
Shift: Karaoke Close
Event: Two step lessons fo' free

Customer:
It was a pretty smooth night overall. Bowling got kinda busy, but that was it. I didn't hear of any customer complaints; everyone seemed happy.

Server: Since dining was so slow there was a lot of servers standing around not doing much. I found things to do to keep me busy, and everyone seemed to watch me and keep talking. A little frustrating, but whatever. It would be cool to make a shift note about keeping busy during slow times.

Support: Danny seems confident on the expo line. He got cut early and it wasn't really busy, but he seemed to know how things worked. Stephen the busser got cut pretty early as well, but he seems okay.

Kitchen: Everything ran smooth here as well. But again, we were pretty slow.

Top Three/Bottom Three:
Top Three - Coltraine, and Patrick are really the only two I can choose. They were in bowling, so they were busy, but they still found time to do running duties and ask people if they needed help.
Bottom Three - Sean because he hasn't been here long enough to sit in the back and talk on his phone when we are not busy. Eric because he was first cut karaoke and he didn't do anything all night, except complain of course. Everyone else in dining just did an okay job, nothing spectacular.
